macOS 11.5 has been release; I’m not sure why you’re still using a beta of it. I recommend that you update to the released version.

Regardless, on the Xcode front, you can use either the latest released version of Xcode (12.5.1) or the current seed of Xcode 13 beta (13.0b5). Both are available from the Downloads area on the developer web site.
