I really love this theory but check these out https://www.notion.so/App-Name-test-4721f5bb85ea4ba78fcc3f0450347420 You can see that even with a triple hyphen there is still a slight space... When we push the app through testflight it's simply one word "TorontoHydro". The dot takes up space but I am not sure it takes up more than 3 hypens worth of width. Which device do you see the space removed on? These pictures in the link above are on an iPhone 12.

Hey Scott, Thanks for entertaining my issue - this only happens once the app is archived and deployed to a physical device. It looks good in the emulator and when running on device attached to the Xcode debugger. Sorry I wasn't clear about that in my post. I tried to update it after the fact but apple forums don't let you edit after a certain period of time. I've requested some technical support from Apple directly through a TSI on the developer portal. Hopefully they can explain what's going on because me and a few developers are completely stumped. If you just upload the sample app or attempt you made on your simulator to App Store Connect you will see that the space quickly disappears when the app installs on your device. Seems like a display name bug. But have no clue as to how or where it started but seems to be happening to people all over the web.
