Is there a way to remove an app from the app store, but leave the option open to relist it? I don't want to remove it and not be able to put it up for sale again in the future.

Go to ASC/<yourApp>/Rights & Pricing, then select all regions/countries, choosing to not have that app on sale anywhere.
Don't forget to re-enable via the same process later.
