Had to reboot the computer, watch and phone to get the "Trust this computer" prompt on the watch.

Now the watch is showing up as available.

I cycled all three devices several times and reset the watch. The watch is paired in "Devices" and I've approved the "Trust this computer" prompt on the watch.

The watch still shows up as Unavailable. Anyone else having trouble with this?

I'm using the most recent beta as of September 2nd, 2015 (13S5325c)

Yes. I'm having this exact issue with 2.0 (13S343) as of September 11th, 2015.

I'm having a wonderful afternoon of the same thing. Just finished restarting all devices, visiting the Member Center to update agreements, and went through the lengthy Watch un-pairing and re-pairing. I'll keep my eyes open for insight.

Update: the Watch was listed as fully available twice throughout my afternoon. I have no idea why. In any case, this apparently hasn't stopped me from embedding and installing my Watch app or anything – just from selecting a debug scheme involving the Watch.
