I've held off installing OS 2.0 so far because in the earlier betas because people said Pay didn't work. Is there a list of what doesn't work properly on the current install?
I am running iOS 9's latest beta, but my watch OS isn't on the beta, and I think it may be why some of my apps won't launch on my watch...so I'd like to get them both up to speed..

Apple's official list of known issues is included in the Release Notes. As you mentioned in your post, if you're going to test watchOS 2 it's important to have both the watch and the phone on the same Beta (always update the phone first, then the watch).

I've had good experience with b5. Excellent battery life (YMMV) - about 18-20 hours. Also, Apple Pay works nicely. Some wonkiness with Wallet (not displaying) and some random restart issues, but definitely usable for app testing and everyday usage. Just hoping for the next update soon.
