running two versions of XCode

Hi,

This used to be simple, but how does one install two versions of XCode on one computer? I have 7, and I need to install 7.1 for beta testing.

Just install...they will name themselves according. 7 will be named Xcode and 7.1 will be named Xcode-beta. You can run them both, but I'd make sure to have backups of my projects incase a beta slaps changes you don't want made to a production project, etc.
