I'm not sure how to take screenshots of my app (I assume I'll need to upload some to iTunes Connect when the time comes).
It'd also be nice if there was a way to capture video of my app in action straight off the device, like you can do with iPhones via QuickTime Player on a Mac.
You can use the Devices panel in Xcode to create screenshots. Just select the device in the left column and click the button to take a snapshot just as you would with an iOS device.
If you are running El Capitan, you can use Quicktime Player to take screen recordings as you would with an iOS device.
