I hated ios9 so much that I downgraded it to 8.3. Didn't know that watch ios 2 won't pair with 8.3. so,..guess I'm stuck. Should I go back to ios9 on iphone or should I just wait it out and hope that eventually they'll offer watch 3.0 and that'll pair with 8.3? Not sure what to do! Not happy with Apple at all!!! What should I do? Which will happen faster, do you think? That ios9 will improvve or that watch 3 will be available and it'll pair with 8.3? What a drag. Help please!!

Dont know what you mean by watch 3. There won't be a watchOS 3 until next year.
watchOS2.0 will never work with iOS 8.x
right now your choices are:
- live with a bricked watch
- continue to use iOS 9 and hope it gets less buggy soon. For me this is not really an option.
- Hope that Apple releases some way to downgrade the watch back to OS 1.x
This is not Apple's fault. Both the iOS 9 and Watch OS installation notes clearly state that downgrading is not supported.
DO NOT INSTALL BETAS ON DEVICES YOU NEED FOR DAILY USE. At least not for several iterations until they are stable enough to suit you (monitor forums for feedback).
watchOS 2 requires iOS 9. You will either need to live without that watch until release, or live with beta software on those devices.

"Pre-release software is intended only for installation on development devices registered with your Apple Developer Program membership."
and:
"Devices updated to watchOS beta may not be restored to earlier versions of watchOS."
and:
"watchOS 2 beta supports iPhone 5, 5c, 5s, 6, or 6 Plus running iOS 9 beta"
If you want to use the wathc, go back to iOS 9. Apart from worse battery life (by around 20%), it's pretty stable and usable on my iPhone 6.
iOS 9B2 fixed the battery issues, and B3 appears even more stable. Jump to there and you will have that, Apple Music, the new News app, and you can get your watch back.
