In settings, disable your passcode
In settings, set the screen auto lock to "never"
Disable facial recognition if your device has that feature
Connect the device to a Windows PC using a USB cable
Update the device using the latest iTunes downloaded from Apple (not through the Windows store)
Re-enable your passcode, screen auto lock, and facial recognition

Thanks Sparklemuffin, I’ve been trying over and over again over the past few weeks to update my iOS 15 iPad to first 15.0.1 and then 15.0.2 from my iPad as well as iTunes. I followed your steps exactly and it finally updated correctly.
One thing I noted which I’m not sure is related or not, my iPad internal storage always says “Zero KB of 256 GB Used” when I am only using around 100 GB and iTunes shows the “Other” category as a size of 16,777,215.81 TB which is pretty far off reality. Just throwing this out as an observation in case there is a correlation for anyone else having this issue.
