Apple says that watch OS 8 will work with iOS 14, however when I install 14.6, or even the 14.7 beta, I cannot pair with a watch running watchOS 8. It says my iPhone is out of date. Is this a beta-specific problem?

Having same issue now. Downgraded my iOS and now I can’t pair WatchOS, funny. I guess we’ll have to wait for iOS 15 or update 14 to 15 beta again, downgrade watches unpair, downgrade phone and then pair.

Apparently there’s no way to downgrade watch, even after reinstalling iOS beta on the iPhone and repairing. I’m stuck with my unpaired watch and desperate about what to do. I don’t wanna wait until mid September for the official releases to have my watch back

I have the same, incredibly frustrating issue. Why, oh why doesn’t Apple have a ‘Oh Jesus I’ve made a huge mistake’ button in every beta that lets you just roll back the OS. 🤦🏻♂️😭 seriously though, this is shocking and there must be a solution? 🤷♂️
I hope iOS14.8 can pair with WatchOS8 beta. If not, I have to update to iOS15 but my XR can't play Genshin Impact 😨

An Apple rep told me via Apple Tech Support chat VERY SPECIFICALLY that iOS 14.8 would pair with watchOS8. I can provide the chat document.
