iOS 15.1 pairing bug with brand new Apple Watch Series 6 !!

I have a brand new iphone XR and a brand new Apple Watch Series 6. iPhone XR was updated to iOS 15.1 when I opened it up. Now trying to pair the Apple Watch Series 6 for the first time. I think I’m hitting an annoying iOS 15.1 bug. The pairing fails consistently at the point where the iPhone tries to update the Watch. It gives an error that unable to reach the internet.

I’ve researched all the workarounds that have been written (restart, reset, sign out of iCloud on phone, reset network settings, turn off Bluetooth, … etc). Pretty much tried everything and all sort of combinations. No resolution. I’m pretty sure it’s an iOS 15 or 15.1 problem. I even tried another iPhone that I have (also 15.1) and same result

Any recommendations?

My next attempt is try another iPhone that is iOS 14 perhaps or older.

Forgot to add that I’m obviously connected to the internet and able to browse all the time.

Funny enough is that when I disable WiFi on the phone, then try the pairing, the error message of unable to update never appears and stays stuck infinitely trying to update the Watch.

Even more bugs appear when you do all the above while the phone is being charged. This is when the iPhone screens for the Watch pairing process start to act up and become incoherent to touches!!
