Sonoma failing builds Xcode 15 and iOS 15

Current system:

Mac Mini M1 2020

Mac OS Sonoma 14.1

Xcode 15.0.1

Simulator iPhone 13 iOS 15

Issue:

Good afternoon,

since I updated to Sonoma my xcode builds keep failing with the following

An error was encountered processing the command (domain=NSPOSIXErrorDomain, code=4):
Unable to boot the Simulator.
Interrupted system call
Underlying error (domain=com.apple.SimLaunchHostService.RequestError, code=4):
	Failed to start launchd_sim: could not bind to session, launchd_sim may have crashed or quit responding

Already re-installed xcode completely and I keep deleting ~/Library/Developer/CoreSimulator/Caches/* but it's not completely a bullet proof solution, from time to time it still fails.

Any hints to solve this?

It looks like Sonoma 14.1 is limited to iOS 15.2. I have an M2 mac mini and that was the oldest platform available to install. 15.0 was showing installed but failed to run.
