We have had a lot of students that frequently turn on Guided Access with a passcode, but never know the code to unlock and turn it off. It would be great for the ability to disable the Guided Access feature via MDM Configuration Profile so we can further prevent this from happening.

Realistically, no one can answer questions like this. The only folks with definitive answers work at Apple, and Apple folks aren’t allowed to discuss The Future™.
If you'd like to see such a feature added to the system, I encourage you to file an enhancement request describing your requirements. Please post your bug number, just for the record.
