It seems that starting Xcode 27, the logs from NetworkExtensions do not show up in the Xcode Console anymore. They still show in Console.app somehow.
I have filed a bug report (FB24985332) about it, if you encounter the same issue, please upvote this so that the NetworkExtension team can fix this faster, thanks !
