If correct, this is rediculous, we are supposed to downgrade to use all features!?
Sounds backwards to me!
This is a beta for developers to try new APIs, its not for general use.
If you take your Apple Watch to an Apple Store they can send it away and revert it to 1.0 if you want Apple Pay.
