Hi i have el capitan beta 2 installed and i'm trying to update to the third beta but i can't. In the Mac App Store Update page it say : install.. but it's stacked.. it's the entire day with this "install" text.. how i can fix that?

Try holding the option/alt key and clicking on the "Waiting" button. This should allow you to cancel it and begin again.
If that doesn't work, you need to set the catalog again with the following command in Terminal:
sudo softwareupdate --set-catalog https://swscan.apple.com/content/catalogs/others/index-10.11seed-10.11-10.10-10.9-mountainlion-lion-snowleopard-leopard.merged-1.sucatalog.gz
