Is it possible to do a Region wise phased rollout as it can be done in Google Play ?. Say I want to release the new version of the App only in Asia, Middle east and Europe. The old version should not be affected in anyway for this. Once we verify everything is working fine then we can release the App in all countries. Please let me know if such a option is available in App store connect.

Per app version, by region*, no. You can only have one version of your app in the store at one time, regardless of region.

If this is simply about testing, you may want to use TestFlight, instead.
