My client had an app created by a company that after a year ceased trading. We've recreated the app and published it but need to get the old version removed. can anyone shed any light on how to do this?

Are you talking about same dev account, or two dev accounts?
If two accounts, do you have the login credentials for both accounts?
If that means you don't have control over the account that app is tied to, I'm not sure there is much you can do other than to contact support directlyand plead your case.

If your client has the access to the developer account (he should have, if the app is under his name I understand), then he will be able to remove the app.
If this is under control of the company that ceased trading, you have little lever, unless contact some person in this former company and ask her to remove the app…
