My developer account runs out in a few days.... I have my devices back on the current release..... but I can't figure out how to remove the 10.11.1 software update in the app store. It stays there, and I can't delete it. I don't want it to install, as I just got back on actual release. Any advice is appreciated.

There's a setting in the App Store pane of System Preferences to change whether you receive pre-release updates.
Open System Preferences > App Store. Change "Your computer is set to receive Software Update seeds". Then restart your Mac
