I've completed my first app and just finished testing it for a few days. Now I'm in the process of taking screenshots on my iPhone 6. I've researched which ones I need but nothing I can find out there seems to be saying the same thing. Apple themselves say that they do not accept cropped screenshots but also say that you should not include the status bar in the screenshots... which is extremely confusing. I've also heard that you need to have screenshots for the 5.5 inch screen as well as for the 4.7, 4.0 and 3.5 inch screens. My app is optimized for the 4.7 inch screen size, but compatible with the 4.0 and 5.5 inch screens as well. I'm really confused right now and I'd love to have someone experienced help me out with this. Do I need screenshots for all screen sizes or only specific ones? Should I include the status bar or crop it? And finally, will apple let me put my screenshots inside a phone so that the users see them as if they were really using their phones?

I've done screenshots with and without the status bar...just be sure to obey the required dimensions, first.
Apple tends to discourage use shots of a phone/bezel as they want to protect their marketing property, and while there may be examples in the store than snuck by review, I'd suggest to not risk it.
My app is iPhone only and only made for portrait mode.
In that case, you'd need screenshots for all iPhones, including 6/+ (not iPad). During submittal, iTunes Connect should make the latest s'shot details clear when working that part of meta data assets, etc., so use that process as the arbiter, compared to anecdotal info off blogs, etc. which risk being outdated.
Use the simulator to capture ones where you don't have a given device.
