Notes safety backup

I love the new Notes app organisation, but since I have to write in the "on phone" account in order to organise, I am no longer feeling safe from getting the instant backup of my notes on my gmail. How come I can't organise in the gmail account? or is there a way I can get each "on phone" note to be automatically sent to my gmail as well? I have lost notes in the past so I want to make sure they're safe.

Back them up locally in iTunes. There is no guarantee that anything stored in notes won't be

modified later even accidentally.

Which version OS X beta/pre-release are you on now?
