Not possible.
Unless that developer deletes his app from the App Store, you will not be able to use the name.
Once an app under development has selected a name no one else can use it. Apple has a way of communicating with a particular user who has selected a name and not launched an app to ask them to release the name - I recall an issue surrounding trademarked names - but I do not know how you do that. You can use the name Climbing Everest or Everest1 or maybe Everest!
If the name has been trademarked then names that are a slight variation of Everest (Everest!) may still fall under trademark laws.
I'm not a lawyer but I have trademarked my app name after I consulted with an attorney familiar with that part of the law.
The question as to whether Everest! is a violation of a trademark for an app named Everest presupposes that the developer for an app named Everest trademarked the name - as you chose to do. But a possible trademark violation is not why the OP can't use the name Everest for their App - it's because someone else has claimed that name for an App.
"Everest!" is a different app name than "Everest".
While I am certain that EverestA is different from Everest, I am not certain that Everest. or EveRest or Ev-erest or, for that matter Everest! is different. I do know that the itms code omits characters like "-" from an app name and that is why I wonder about "!".
The OP could just try to reserve the name.
Then we'll all know.
