Native Mac/iOS apps are typically written in Objective-C or Swift.
Xcode is the IDE (Integrated Development Enviroment) that contains the tools needed to create the apps - code editor, compilers for Objective-C & Swift, debugger, build tools etc … so one would typically write either Objective-C, Swift or a mix of Objective-C & Swift using Xcode.
That's like asking if popular books are written in English or with Word.
