At Apple's developer website, where I look at my provisioning profiles (https://developer.apple.com/account/ios/profile/), I see the above screenshot telling me about using XCode to generate a provisioning profile. It's under "Generate Provisioning Profiles with Xcode". What is the Organizer window that that is talking about?

In Xcode, 'Window' is the name of one of it's menus, just left of 'Help'.
Use the Window menu to find and select 'Organizer', which will open in a new window.
