We are developing an app that has to be tested in acceptance by my client. They have provided an API on their acceptance server which is not available for everyone. They use an Ip filter on their proxy for that. When Apple does their review, with what ip range do they connect to this API then?

Well, Apple owns the entire 17.0.0.0/8 block of IP addresses, so it's likely that they would use one of those for review purposes. What specifically do you mean by "tested in acceptance"? If you're talking about restricting the use of the app based on the IP address of the device, that's not likely to go over well with App Review. If you could explain in a little more detail what you mean, that would be great.
