There is no specific requirement for pose detection. As usual, devices with Apple Neural Network capability will perform better, especially in real time scenarios.

Excellent question! Body and hand pose will work on any device running iOS 14, iPadOS 14, macOS Big Sur, or tvOS 14. Of course, devices with the latest hardware like A13 Bionic chips will have the benefit of seeing greatly reduced latency in the prediction and provide full frame rate prediction capability. On older hardware, you may not be able to do prediction of every frame unless you're doing offline processing. In such a case, it is recommended that you consider reducing the number of predictions to "every few frames" to ensure best performance on older hardware.
