My watch says it’s connected to my iCloud account but not my phone. When I go to the watch app it tells me to hold it up to the screen but never scans it or says to unpair my already disconnected Apple Watch, so then I try to do it manually but the italic i icon isn’t anywhere on my watch. So then I try to go to my watch to pair and I also can’t find anything but it telling me to go to the watch app on my phone which I already tried. Does the Apple Watch series 1 not work /w the iPhone 12?

Do a hard reset on your watch. Once it has reset you should be able to pair it and retrieve the existing backup in your phone.
