App Tracking Policy for e-commerce

We are a bit confused about this. We are an e-commerce company and we request user location upfront to deliver their goods. We don't show any form of ads in our App and we use firebase to send notifications about our new products and products which were out of stock and user wanted to be notified when it is back in stock. All other data is stored in our database securely. We use AWS personalize to recommend products to the user but we don't share any other information with AWS except the user id to get the personalized recommendation for a particular user. In this case, what should our tracking policy be like? Also we use Firebase Analytics and Crashlytics which requires us to pass in user email as a required field. Since we don't use the UUID of the user at all. Should we really show the app tracking dialog? Kindly help us out
