I just updated my MacBook Pro to Big Sur 11.6 and every time I try to open safari, safari crashes. I can’t even get it to stay open at all.

Which version of Safari ? Latest is Version 15.0 (16612.1.29.41.4, 16612)
If Safari can't open, you can get it be looking at informations on Safari in Application Folder.
If you have not the latest version, you may try to update. Look at Appstore updates in the Apple Menu.
Did you try to install Safari Technology Preview ? That could allow you to wait for the next MacOS update that will also install a new version of Safari.
