Originally, "Desktop" meant that users had purchased it using iTunes on their Mac and then synced to their iPhone/etc using USB. I don't know if that process is still possible; it's certainly not common.
Now, I believe that "Desktop" means that a user with an "Apple Silicon" Mac has installed a "Designed for iPad" app on their Mac.
There may be other circumstances where "Desktop" means "miscellaneous" in some other sense.
