Hi, i've build an expo app that I submitted to the App Store but the language wrote on the app is English, but every language configuration in the App Store Connect is set at French.
In General Settings > Principal Language is set to French.
Does anyone have a solution to this problem?

Langues here are the languages the app itself is localized into, not an App Store Connect configuration.
(Under the hood: the *.lproj folders in your project.)
The default ("Base") localization for Xcode projects is English. You can add additional localizations. See Adding support for languages and regions for how to support additional languages.
It will also be worthwhile reviewing Localization generally.
