Diminished quality of Live Photos & missing metadata

Looking at live photos captured using the "Most Compatible" format setting on my iPhone, the resulting image appears much grainier and less detailed than I would expect from the ISO, shutter speed, resolution etc.. of the shot.

Do we know anything about how Apple is allowing us to change the Key Photo of a Live Photo? From what I understand of Live Photos, the iPhone's camera is only able to capture the highest quality still image at that one point in time, while the sensor continues to record lower quality (720p, 1080p resolution?) video in the background.

So the real question I'm getting at is, do the new Live Photos compromise image quality for the sake of convenience?

Also, HEIC images seem to be lacking full metadata. Can anyone else confirm? I see no camera and lens information and shutter speed, etc... Location is preserved though.

on iOS 11.1 with my iPhone 8 Plus i cannot verify the lack of full metadata.

I can see shutterspeed, iso, aperture, flash, maker, model etc.
