With beta 2 and beta 3 the Bluetooth disconnects in my car and device cannot be found to pair to. No rhyme or reason. This coupled with multiple soft restarts is a huge step backwards from even beta 1
iOS 11 Bluetooth Disconnect
Do you have any other bluetooth devices connected to your phone whilst also connected to your car?
I have this issue and I've found the issue to be related to also having an Apple Watch connected to my phone while driving. I remedied the issue by putting my watch in airplane mode while I'm in the car and I haven't had it happen since, just some minor drop outs that only last a split second. I also run into bluetooth problems when using AirPods with my phone while connected to my Apple Watch as well. Again, putting in airplane mode fixes this, however, this is only a temporary solution. We will hopefully see this fixed within the next few builds (hopefully sooner rather than later, constantly switchting to airplane mode is not ideal).

I have found that certain apps disconnect the Bluetooth from all devices. I have a continuous glucose wearable monitor that connects to my phone and as soon as I open any of a handful of apps the Bluetooth disconnects. So, in my case, it's not just an issue with multiple devices that can't connect, some apps that do not even use Bluetooth seem to interrupt the process.
It is a rather bothersome inconvienence, hopefully, a new build will go out soon to correct it.

If certain apps, especially ones that are not expected to use Bluetooth, are causing disconnects, please file a bug report about it, listing the apps if they cause the problem repeatedly.
Same problem here since beta 2: I have frequent disconnect and reconnect of my Beat (W1) Bluetooth headphone. Sometimes I can get 15-20 minutes of uninterrupted music, other multiple disconnect in a row over a 2-3 minutes period. Same thing in my car. Yes, I do have an Apple Watch...
