I've recently removed a number of apps from sale, but don't want to delete them permanently as need to retain the name for future use.
Do you know if there is a way to force the removal of the app from user devices, or do you have to wait until they remove it themselves?

There is no way of your removing the app from a user's device. If the app accesses a website for content that you control, you might be able to crash the app by altering that content.
You'd have to wait - they bought it, they own it otherwise. As well, even if you take it off sale, they can still 'restore' it as an older/current version via the store.
