How to set print queue defaults without CUPS web interface?

Now that Apple has apparently removed the web interface from CUPS from MacOS27 (though there's no mention of it in the Release Notes); what is the sanctioned method of configuring print queues and setting their defaults?

Have we got to use lpadmin and lpoptions? #progress

Is CUPS deprecated? The github repository was archived in March; and the last version of CUPS is dated 2022.

PS. Any way to add the MacOS 27 tag to this, now we're out of beta?
