To ensure you're on the latest when iOS 11 is officially released to the public, you can delete the beta profile on your phone and then restart your phone. Then go back and check for an update, if it says it is up to date then you're on the latest.. It's that simple. You can also plug your phone into your computer, put your phone in recovery mode and hit the update button when promted to do so.
