Currently I'm trying to install iOS 11 GM over the air onto a iPhone 5s however having issues. When clicking on the Download and Install button it allows me to enter my six digit and accept the terms and conditions the Download and Install button turns grey however back to blue. I have tried doing a hard reset, restarting the device and redownloading the beta profile but no luck.

Fixed it; you need at least 3GB of free space, then the update will download and install.
