For my personal use and not for developer assignments, I am still using my iPhone 6sPlus. However, I do run the latest Beta iOS on the device. I've decided to upgrade to the iPhone X and I have one arriving on launch day. I'm wondering if I should install Beta on the X or should I just keep the latest stable version on it. Any thoughts?

You'll need to wait for Apple to release the iOS beta for iPhone X. It seems like it's not available yet.
As for whether it makes sense to use iOS beta on iPhone X, that's really up to how much you tolerate any unpredictable behaviour that may result.
Personally, I intend to install iOS 11.2 beta as soon as I can.
