How do i unenroll my phone from the iOS beta so I can develop with it?

I installed iOS 11 Beta on my iPhone 6 this summer, and used it with a beta version of XCode to develop. Having to download XCode versions compatible with the beta iOS versions as they change is a bit more effort than I'd like, so after XCode 9 was released publicly I switched to the App Store version.

The problem is, I can't develop with my phone using the App Store version of XCode.

Normally at this point, I would just restore my phone to a backup prior to downloading the iOS beta, but there are two problems:
* that's months worth of data, I don't really want to rollback that far

* I transfered my phone to a new iPhone X last week

I didn't even realize I was still on a beta version of iOS until I went to build using the new phone on XCode, and it complained it didn't know how to play on the beta OS.

Does anyone have any idea of the best way I can get my phone off the Beta or at least compatible with building on XCode?

Is there an option where I can opt out now, and get back on the main releases next time a public OS upgrade is released?

How do i unenroll my phone from the iOS beta so I can develop with it?
