My iPhone 8 Plus somehow had a "Senior Discount" Profile installed, instead of my developer profile? I have deleted the bogus profile. What else do I need to do to insure this malware is gone, and get back my developer profile?

This is usually a result of clicking on a ad. Look for others you may not recognize. Get rid of any shady apps with ads, any apps with Senior in the name you didn't want to install from the store and resist tapping on any ads like that in the future 😉 - it might just be a bad actor app and not require you to interact with an ad...
Not sure what this has do with you dev profile(s), tho. Are you saying the bogus app wiped out your other profiles?
