I'm trying to get iTunes to display my company name (it's a registered single person LLC) instead of my personal name. My company is already associated with my Apple ID— Apple did the D-U-N-S verification and it shows the company name when I sign in to the Developer Center. However, in the App Store, it still shows my personal name. The documentation I can find seems to indicate that Apple is very restrictive about changing this name. I am wondering: Do I need to create a new Apple ID with my company email and use my company's name from the start? Or is there some other way to have my company name show up in the App Store?

Not sure why you think starting a new account would work, if the normal process with the account you have wouldn't. It sounds, tho, like you haven't really taken the proper steps and contacted Apple directly.
