I am considering working part time online and from home. My potential employer will send me contract work from various other companies. One of these companies has asked for my UDID as part of an IOS project and I am certain this will not be the only one to request this information. Is this information something I should protect and not share in this case or how would I know when it would be acceptable to share? What is the risk? How did I find it (current steps) if It is acceptable to share?

Did they give you a valid reason to do so ? Do they want to enrol your device in their management system ?
You could argue that you are, in your developer work, very concerned with safety, hence you avoid sharing such information.
If really needed, get an iPhone on which you store nothing and don't share anything on iCloud. That will be your scape goat.
