Why the hell didn't you add support for the iOS 14.7 in XCode 12?
When I connected my iPhone and iPad to my Macbook to run the app I develop, I was suggested to upgrade them to the new iOS version, 14.7.1. Then, I discovered, that XCode 12 I have does not support both of my devices. Thank you, Apple.
Now, what can I do to test my app on my iPhone and iPad?

BTW, I have XCode 12.4 installed, and there is a newer version 12.5.1, but the AppStore claims I have the newest one.

You need a more recent Xcode, 12.5 at least. Note that this requires a Mac running macOS Big Sur 11 or later. That's why AppStore claims you have the newest one: that's the latest you can install with this version of MacOS.
As a conclusion, you need to keep your iOS devices and Mac enough in sync:
- update to BigSur. Most recent is 11.6
- update to Xcode 13 RC
That's about 25 GB to download, so be patient.
