+1 same issue, resetting Simulator does nothing
Work for me, but only after upgrading to Sonoma last night, and then letting Xcode reinstall the simulator when it asked to on first launch. Before this I was stuck using the older beta due to the same preferences crash.

While you wait for a fix, you might want to check out the ControlRoom project on GitHub. Many of the settings can be easily accessed using ControlRoom.

I had the same issue with 15 Pro. Was able to use the 15 following this post.
I have the same problem. Settings app crashes on iPhone 15 Pro, etc. Settings app only works on iPhone SE for me. Reboots and reinstalls did not fix the issue.
