I know this is a stupid question, but I cannot figure it out!
I have this .mobileconfig file but obviously that tiny thing is not an entire beta
Is there really no official instructions/documentation?? Or am I completely blind and missing it?

First off, are you talking about installing the developer beta or the public beta?
How are you trying to install the beta, by connecting IOS device through iTunes or doing Over the Air?
What do you see if you go to Settings/General/Profile?
For the public beta, once you have enrolled you should be able to pick the IOS public beta, then when you go to Settings/General/Profiles you can select the beta profile and select install, after excepting the T&C's you then just follow instructions for the installation.
For the developer beta, you sign in to your developer account (from your IOS device) and go to downloads, there you see the IOS beta, select it for download and do pretty much the same thing as you do for installing the public beta.
Excellent, thank you. I was looking for the developer beta, but I haven't installed one since the old days of manually downloading the OS / installing through iTunes
All this public/dev split, and developer account on your device is new and scary but I can figure it out now thank to you 🙂 out of curiosity, is there any official Apple documentation covering how to install the dev beta? As I mentioned, I looked but couldn't find any... but that seems like an absurdly basic thing for them not to put out!
