I'm with difficulty in to send legal invoice document to apple.
I understand that this process does receive me the money of sales of my apps.
Someone know for where I have that to send the legal invoice?
By email?
By other type?

You do not invoice Apple for the sales of your apps. Apple acts as your agent on those
sales and pays you when your sales have passed a specific threshold. They also are
paid the month following not the month the sales are made.

Example: Apple credits my company account with 1000 euros. I need to invoice apple for this figure. But does apple invoice my company their fees? NOrmally I think they will. How do I deal with this? Should I get an invoice of apple fees, and need to invoice apple transfer to my aacount plus the amount of apple fees?

That would be via company bank statements. No invoicing. In some cases, Apple sends out documents related to taxes.
Financial reports are available via iTunes Connect. Payments are electronic.

Wrong term. As for 'fees', remember the 70/30* is a revenue split, where Apple takes 30% of the transacted revenue, not 30% of your 100% - the 70% (more like a royalty) from the transaction is your '100%' (taxable amount/your burden where applies) and no fees are taken from it. Note the absence of your use of 'fees' in your Developer Program Agreement. https://developer.apple.com/terms/
Your 'fee' is the annual USD$99 for the Developer Program Account. That invoice is found in the online Apple Store account tied to the main Apple ID on the dev account.
