Take care as well to have large enough screen. XCode requires large screens to be comfortable.
If you want a MacBook, choose 15 or 16 inches screen (I have 15", it's OK, but I also added an external 27" monitor for XCode)
If you want an iMac, 27" is really great (21" would be good as well) ; have at least 1 TB storage, 2 TB if you can afford. 16GB will be OK at least to start, but would be better to have more (I have 24). Processor speed is not an issue ; I don't think it wise to spend a lot for faster speed.

IMHO you could buy a second hand, if it is just 2 or 3 years old. But take care, they may not be such a bargain compared to new Mac. Check also if you can apply for specific programs (like students…).

Hope that helps.
Any current Mac will be fine. Just don't buy a used one.

You'll probably 16 GB of RAM and a lot of storage space. Just downloading an Xcode update will take at least 35 GB of free storage space.
