Hello, I need to compile an application made in Flutter.

The iMac is from 2010, so it has OS X Yosemite (10.10.5). I can't put Catalina.

You need an XCode at least version 11

Do you know what OS I can install on this iMac that allows me an XCode 11 or higher?

Necesite un XCode como minimo version 11

Unfortunately, your Mac is too old to install Xcode 11 or higher, which requires macOS 10.14 at least.
Better visit Xcode wiki.

And hardware requirement for macOS 10.14 (Mojave) is as follows:
