Hi, I'm product designer and I'm looking for HIG for layout recomendations, currently I can't find anything about recommended numbers for spacing/paddings etc.. Did Apple remove this and why?

I think the best place to find those guidelines would be in the design templates and libraries available on their Resources page: https://developer.apple.com/design/resources/#ios-apps
Their recommendation changes between devices and OS updates so maybe that's why they don't have them in the HIG
