Apple just released the iPhone X build (OTA is still on 11.1 for me, but you could manually install the update ;)
OTA 11.2 was just pushed out to my X. Upgrading now - hopefully this fixes the issue!
The Health and Activity data stored on the device does appear to get corrupted when downgrading to iOS 11.1, but since it's stored in iCloud (assuming you have the "Health" switch toggled on in your iCloud settings), it will actualy come down properly when you restore that iOS 11.1 backup onto a new iPhone.
My guess is that iOS 11.1 can't read the Health data that's already stored on the original, downgraded iPhone, but of course since it's not part of the iCloud Backup (it's stored in iCloud separately), that iOS 11.2-specific database won't end up on your new iPhone, and it syncs down from iCloud just like it would normally.
That was fast. 11.2 beta 2 is available for Iphone x. I was able to download profile and restore my backup from my 7 plus.
